Chef Mohammed Hossen is a highly accomplished and award-winning chef with over 25 years of experience in the culinary industry. He has built a strong reputation for excellence in both Mediterranean and modern cuisine — renowned for his mastery of flavour, technique and presentation.

His culinary journey began in Montréal, where he developed a deep appreciation for diverse flavours, traditional cooking methods and authentic Mediterranean food culture. This foundation shaped his lifelong passion for creating dishes that are both bold and memorable. There, he also deepened his knowledge of halal cuisine — its principles, preparation standards and cultural importance — allowing him to craft meals that are both authentic and respectful of halal traditions.

Over the years, Chef Mohammed advanced into leadership roles in prestigious kitchens, including serving as Executive Chef at the Chicago Chophouse in downtown Calgary. His expertise, creativity and dedication to quality earned him recognition as a respected and award-winning chef in the industry. Having visited 25 countries around the world, he brings a global perspective and diverse culinary inspiration into every dish he creates.

With a strong and refined understanding of food — particularly Mediterranean and halal cuisine — Chef Mohammed is known for his commitment to freshness, authenticity and consistency. He is deeply passionate about supporting the local community, with a strong belief in using fresh, locally sourced ingredients. His motto is "eat fresh, eat local" — proudly supporting Calgary businesses and partnering with Alberta farmers.

Today, he embarks on an exciting new chapter — rebranding Donair Grill into Hossen Donair Grill & Kabab, a concept that reflects his vision, heritage and culinary excellence. This new venture represents his passion for elevating traditional flavours while delivering a modern dining experience built on quality, authenticity and pride in craft — while staying true to halal values and standards.

2001

Montréal beginnings

Chef Hossen begins his culinary journey in Montréal, immersed in Mediterranean traditions and learning the foundations of halal cuisine.

2007

Calgary calling

Settles in Calgary. Joins downtown's Pennylane Entertainment Group.

2012

Executive Chef · Chicago Chophouse

Earns the head-of-kitchen role at one of Calgary's most prestigious steakhouses. Award-winning recognition follows.

2015

Head Chef · Atco Fort McMurray

Takes on the Head Chef role at Atco Fort McMurray, leading a high-volume kitchen in one of Canada's most demanding environments.

2017

Executive Chef · Delta Lodge Kananaskis

Appointed Executive Chef at the prestigious Delta Lodge Kananaskis, bringing refined Mediterranean and halal cuisine to the Rocky Mountains.

2018

Executive Chef · Civeo Lynx Lodge Fort McMurray

Leads the kitchen at Civeo Lynx Lodge Fort McMurray as Executive Chef, overseeing large-scale culinary operations with excellence.
